Mediterranean Steamed Salmon (Oven)
My own take on a mediterranean inspired salmon dish. Kids love this one served with fluffy mashed potato, as it's easy to eat and you can dial up the flavour with simple ingredients to impress at a dinner party or for a simple midweek tea.
Pre-heat oven to 180° (fan), 200° (conventional)
Cut your tinfoil so that you have enough space to lay your side of salmon flat, and enough left over to wrap into a loose parcel. This will allow your salmon to steam in the oven and keep it moist.
Lay your salmon in the middle of your tinfoil, skin side down.
Drizzle the balsamic vinegar across the salmon flesh.
Slice your lemon thinly and lay lemon slices across the flesh of the salmon.
Scatter a tablespoon of caper berries over the middle of the salmon.
IF using chilli flakes then sprinkle carefully across the salmon.
Transfer salmon to a deep-sided roasting tin and wrap into a loose parcel. You want to make sure there is enough air inside the parcel to allow the salmon to steam gently.
Bake for 27 minutes (500g) or according to instructions on packaging.
This flavoursome fish goes really well with fluffy mashed potato, or for a lower calorie option you can swap the white potatoes for a carrot and swede mash or spiced roasted parsnips!
For younger children or fidgety eaters, mash the salmon into the potato along with chopped broccoli (or alternative green vegetable). It's easy to eat with a spoon or fork and can really help children with short attention spans. Less table tantrums all round!
