  • 180ml fresh orange juice 
  • 60ml fresh lemon juice 
  • 60ml fresh lime juice 
  • 60ml chicken stock 
  • 1 garlic clove, minced 
  • 2 tablespoons orange marmalade 
  • 2 tablespoons soy sauce 
  • 1 tablespoon vinegar 
  • 1 tablespoon light brown sugar 
  • 1 tablespoon butter 
  • salt and pepper 
  • extra-virgin olive oil, for brushing 
  • 4 salmon fillets 
  • salt and pepper 
  • 1 cup cooked rice 


  1. Glaze: Bring all of the ingredients to a boil in a medium-sized saucepan over medium heat, stirring to melt.
  2. Reduce the heat, and let the glaze reduce until syrup, about 15-20 minutes.
  3. Add salt and ground black pepper, to taste.
  4. Heat a grill to medium-high heat.
  5. Brush both sides of the fillets with olive oil, then season with salt and pepper.
  6. Grill the salmon 4 minutes, brushing with the glaze, flip and cook 4 minutes more.
  7. Transfer the salmon to serving plates and enjoy.
